Compared to white quinoa, black quinoa has more of an earthy flavor and is slightly sweeter. It tends to hold its shape better when cooked which makes it the perfect ingredient for cold salads.
A member of the amaranth family, quinoa is an herbaceous annual plant grown for its edible seeds.
It was domesticated by the Andean peoples 3,000 to 4,000 years where it was a staple food. The Incas called quinoa "chisoya mama" meaning mother of all grains.
Cooked quinoa is composed of 72% water, 21% carbohydrates, 4% protein and 2% fat. It is a rich source of the minerals manganese and phosphorous; and a moderate source of dietary fiber, folate, iron, zinc and magnesium.
