Carob is made from the pod of the carob tree, a small Mediterranean shrub. The pods are dried, roasted, and ground into carob powder before being made into the chips. Carob is less bitter than chocolate and has a natural sweetness. Carob chips are a natural alternative to chocolate chips. Compared to chocolate chips they have a lower sugar content, are lower in fat, higher in fiber and contain no caffeine. Carob chips don't taste exactly like chocolate but are fairly similar in flavor. They also don't have the same richness and "ability to smoothly melt" texture as chocolate, however, they are vegan-friendly. Carob chips can be substituted one for one with chocolate chips in any recipe. They are great in cookies, cakes, muffins, bars, pancakes, and waffles.
