With Valentine’s Day nearly here, it’s time to start thinking about the perfect gift to get for that special someone. Rather than a gift card or store-bought item, our loved ones enjoy receiving a gift we make from the heart. Aunt Patty created this easy to follow, fun to make, tasty recipe for Valentine’s Day cookies.
Aunt Patty’s Valentine’s Day Cookies
1 Cup Ground Almonds (optional)
½ Cup Softened Butter
½ Cup Aunt Patty’s Extra Virgin Coconut Oil
¼ Cup Powdered Sugar
¼ Cup Aunt Patty’s Sweet Agave Powder
2 Cups Flour
2 Tsp Aunt Patty’s Vanilla
¼ Tsp Salt
Ground Almonds until fine, and not pasty.
Beat butter, Aunt Patty’s Extra Virgin Coconut Oil, powdered sugar and Aunt Patty’s Sweet Agave Powder in large bowl with electric mixer at medium speed until light and fluffy. Gradually add 1 cup flour, Aunt Patty’s Vanilla and salt. Beat at low speed until well blended. Stir in remaining 1 cup flour and ground almonds with spoon. Form dough into a ball; wrap in plastic wrap and refrigerate 1 hour or until firm.
Preheat oven to 350 degrees F. Roll tablespoons of dough into 1-inch balls. Flatten just slightly. Pour the decorative sprinkles onto a plate and roll edges of cookie into the sprinkles. Place on an ungreased cookie sheet, 1-inch apart. Place chocolate pieces in the center of each cookie. Bake for 12-15 minutes or until slightly golden around edges. Let cookies stand on cookie sheet 2 minutes.
Now comes the fun part! Sample a few (You’ve got to make sure they turned out ok!!) and then deliver to your favorite Valentine.
