1 15 1/2 oz can of red kidney beans, or 1 cup dried red kidney beans soaked overnight and boiled until soft
Block of Aunt Patty's Creamed Coconut diluted with water, about 4 cups
2 cups of rice
1 small onion, chopped
1 clove garlic, chopped
1/4 teaspoon dried thyme
Salt & pepper to taste
1 tablespoon Aunt Patty's Coconut Oil
1/8 teaspoon red pepper flakes (or to taste)
Directions:
Drain the liquid from the can of beans into a measuring cup and add the 4 cups of diluted creamed coconut. Place liquids in a pot with beans, onions, garlic, thyme, salt and pepper, red pepper flakes and coconut oil, bring to a boil. Add rice and stir for a minute. Reduce heat to medium low, cover and cook for 30 minutes or until rice is done.
