Rye is a grass grown extensively as a cereal grain, cover crop or forage crop. It is used as the principle bread and cereal grain in Northern Europe and Russia, but is growing in popularity in the U.S. with the growing trend of consumers eating whole grains. It is made by slightly cracking the rye berry to reveal the bran and germ inside. Rye is a rich source of protein and dietary fiber. It is also high in selenium, phosphorous, magnesium, copper, zinc and protein. Cracked rye is diverse in its uses. It is commonly used by distilleries and breweries to make alcohol such as rye whiskey and rye beer. It is also commonly added to baked goods such as bread to add texture and protein or used as an ingredient to make hot cereal.

Suggested Storage: The shelf life of cracked rye is dependent on storage conditions and is highly variable. It should be stored at temperatures between 50 - 70 degrees F and at less than 60% relative humidity. The industry standard for shelf life is 180 days from the date of manufacturer when stored under optimum conditions.
