This whole rye is milled on a short flow roller mill where the bran and germ is not separated during the milling process. Short flow roller mills are more gentle on the wheat kernel and the milling process generates much less heat. The fine granulation of this flour will give you a super smooth dough. This flour is a superb addition to 100% whole grain breads — both artisan and pan (sliced).
Storage Recommendations
Central Milling recommends that you store this flour in a cool and dry place. 65˚F and 60% humidity is ideal. The flour will keep about 6 months under these storage conditions. The germ and the bran in this product make it more volatile. Central Milling recommends also recommend that you store the flour in a sealed food-safe plastic container.
