Einkorn (Farro piccolo) is the world’s most ancient type of wheat. It is one of the first plants to be domesticated and cultivated. It has a higher percentage of protein compared to modern red wheat and is considered more nutritious with higher levels of fat, phosphorous, potassium, pyridoxine, and beta-carotene. Einkorn berries have a full, nutty flavor with a light brown color. They are a tasty and nutritious ingredient to add to soups, salads, bread, pastries, pancakes and waffles.

The product shelf life of einkorn berries is dependent upon storage conditions and is highly variable. They should be stored under cool, dry conditions in a humidity controlled environment. The industry standard for shelf life, when stored under optimal conditions, is 24 months from the date of manufacture.
