Cocoa nibs are small pieces of crushed cocoa beans. They are fermented, dried, roasted, winnowed (de-shelled) and then crushed into nibs. They are delicious in baked goods, smoothies, oatmeal, trail mix, energy bars and granola. Cocoa nibs are the least processed type of chocolate and are more nutritious than other processed chocolate. Not only are cocoa nibs lower in sugar and are a good source of fiber, protein, and healthy fats, but they also are a rich source of dietary minerals including iron, magnesium, phosphorus, zinc, manganese and copper.
Cocoa nibs are also a good source of plant compounds (flavonoids) that are high in natural antioxidants. With a more bitter taste and higher caffeine content than other types of chocolate, it is recommended to not over-consume them.
