Our organic blue agave syrup is 100% pure nectar extracted from the Agave Tequilana Weber plant. This plant is "origin certified" meaning it comes from one region within Mexico. Origin certified agave produces a product that is more consistent in color, taste and texture.
Our organic blue agave syrup is processed by removing the root or bulb of the plant called the pina. The pina is cut into small pieces and then put through a process of hydrolisis (water is run through it). This process pulls the fiberous inulin out of the pieces and breaks the starches down into sugars through the use of temperature rather than the use of enzymes. Once the sugars are broken down and the liquid is filtered, it is then evaporated through a vacuum process making it into a syrup.
Blue Agave has a distinct sweet flavor compared to the flavor-neutral Light Agave. It also has a lower glycemic index due to its higher content of fructose. About twice as sweet as sugar, it is most commonly known as the agave syrup used to make tequila, but it is also used as an alternative natural sweetener for beverages, baked goods, dressings and cereals.

The shelf life of our organic raw blue agave syrup is dependent upon storage conditions and is highly variable. We recommend to store it under cool, dry conditions in a humidity controlled environment. The industry standard for shelf life is 24 months from the date of manufacture when stored under recommended conditions.
