Anacardium occidentale, which is the botanical name for the cashew tree, was originally grown in Northeastern Brazil where Portuguese colonists began exporting them in the mid-1500's. Today, cashew nuts are predominately grown in Vietnam, Nigeria, India and the Ivory Coast. The cashew tree is an evergreen grown in tropical climates due to their frost sensitivity. This popular snack is unique in that it grows from the bottom of the "cashew apple" which is an accessory or "false" fruit produced by the tree. The true fruit of the tree is a kidney-shaped drupe within which the seed grows that is commonly known as the cashew nut. The English name for cashews is derived from the Portugese name "caju" which translates to "nut that produces itself".
Cashews are nutrient-packed containing high amounts of protein, dietary fiber and antioxidants. A rich source of dietary minerals copper, manganese, phosphorous, magnesium and vitamins such as thiamine, vitamin B6 and vitamin K; cashews are also knows to be a great source of oleic acid which is the same good monounsaturated fat found in olive oil.
With their mild, buttery flavor, our raw large white cashew pieces, made up predominately of halves and quarters, make for wonderful snacking and baking nuts or to make cashew milk, butter and cheese. They are also commonly used in Indian, Thai and Chinese cuisine.

Product shelf life is dependent on storage conditions and is highly variable. Cashews should be stored under cool, dry conditions and in a humidity controlled environment. The industry standard for shelf life, when stored under optimum conditions, is 12 months from date of manufacture.
