Description

Lentils are named for their lens-shaped seeds. Lens culinaris, the botanical name for lentil, are part of the legume family and are also known as a pulse. They are a bushy annual plant where the seeds grow in pods (usually two per pod). Lentils are the oldest known pulse crop dating all the way back to 11,000 BCE. With origins in the Near East and Central Asia, today, they are mostly grown in Canada, India, and Australia.

Lentils are composed of 8% water, 63% carbohydrates, 11% dietary fiber, 25% protein, and 1% fat on average. They are a rich source of the vitamins and minerals folate, thiamin, pantothenic acid, vitamin B6, phosphorous and zinc. Lentils come in a variety of colors including black, orange, green, and brown. Slight sweeter and with a less firm texture than green lentils, red lentils are used worldwide in a variety of different dishes includes soups, stews, salads, and curries.

SUGGESTED STORAGE

The product shelf life of red lentils is dependent on storage conditions and is highly variable. They should be stored under cool, dry conditions in a humidity controlled environment. The industry standard for shelf life, when stored under optimum conditions, is 18 months from the date of manufacture.
