Milled from premium hard red winter wheat, Sir Galahad Artisan Flour from King Arthur Flour is best described as an all-purpose, low protein bread flour. It is a flour commonly used in bakeries due to its high versatility... strong enough for bread but gentle enough for delicate scones and cakes. It can be used to make artisan bread, laminated dough (alternated layers of butter and dough for making pastry), Neapolitan pizza, cookies, scones and quick bread. The wheat used in this flour is malted which means it is allowed to germinate. This germination helps to break down the complex sugars and starch in the dough to simple sugars making them easier for the yeast to feed upon.

Product shelf life is dependent upon storage conditions and is highly variable. The product should be stored under cool, dry, dark conditions in a humidity controlled environment. The industry standard for product shelf life, when stored under optimal conditions, is 6 months from the date of manufacture.
