Central Milling's Organic Unbleached Pastry Flour is milled from a premium quality soft white wheat grown in Washington State. Soft white wheat has a lower protein content than hard winter wheat which makes it perfect for making pastries, cookies and cakes. Too high of a protein content makes dough tough instead of soft, flaky and crumbly. This flour can also be used to blend with stronger flours to lower protein content. This helps to increase the shelf life of flour without needing to add dough conditioners.

Product shelf life is dependent upon storage conditions and is highly variable. Product should be stored under cool, dry, dark conditions in a humidity controlled environment. Industry standard for product shelf life, when stored under optimal conditions, is 6 months to 1 year from date of manufacture.
