Natural brown sugar is produced from the late stages of cane sugar refining. Its distinctive brown color comes from the presence of molasses which is the residual solution left after the crystallization process. The darker the brown sugar and the stronger the taste, the more molasses it contains. On average, dark brown sugar contains approximately 6.5% molasses by weight. Molasses is hygroscopic in nature making brown sugar very soft and moist. The cane is cut green, never burned and are not treated with herbicides or synthetic fertilizers.
