The distinctive brown color in brown sugar comes from the presence of molasses which is left over after the crystallization process of natural cane sugar production. The darker the brown sugar, the more molasses it contains. Light brown sugar contains the least amount of molasses compared to medium and dark brown sugar. On average it contains approximately 4.5% molasses by volume. Molasses is hygroscopic meaning that it draws and retains moisture which makes this brown sugar soft and moist.
