Organic quinoa is commonly used similar to rice as a side dish or in salads. It is also often used in baked goods such as as bread, bars and cereals.
A member of the amaranth family, quinoa is an herbaceous annual plant grown for its edible seeds. Quinoa was domesticated by the Andean peoples 3,000 to 4,000 years where it was a staple food. The Incas called quinoa "chisoya mama" meaning mother of all grains.
Cooked quinoa is composed of 72% water, 21% carbohydrates, 4% protein and 2% fat. It is a rich source of the minerals manganese and phosphorous; and a moderate source of dietary fiber, folate, iron, zinc and magnesium.
