Demerara sugar is also commonly known as turbinado sugar. It is produced from fresh cut sugar cane which is squeezed to remove the juice. This juice is then partially evaporated and spun in a large turbine (hence, the name turbinado) until large, sparkling, golden crystals are formed. The spinning process removes most of the molasses, leaving only a slight hint of molasses flavor and color. Compared to white table sugar, demerara sugar crystals are much larger in size. Because of its larger crystal size, demerara sugar is commonly used as a topping for cookies, muffins, crumbles, pies and Crème Brulee. It also can be used to make glazes for meat dishes. No chemicals, bone char or animal by-products are used to make or de-colorize this sugar which makes it also perfect for vegan baking.
