Central Milling's Organic Unbleached Enriched Wheat Flour is exactly the same wheat blend as their Artisan Bakers Craft Unbleached Flour except that it enriched with iron and B vitamins. Enrichment of flour is required in certain countries such as Canada and in some baking applications. This flour is milled from hard red winter wheat which means it has less protein content than flour milled from spring wheat. This more moderate content of protein makes it good for baking artisan hearth breads. The quality of the protein from winter wheat give bread dough better fermentation tolerance (gluten will last longer at the bread's highest rising point). Also, the more moderate protein levels allow for the bread to have a more open crumb, not tight or as chewy as breads made from spring wheat. Specifically, this flour works excellent in making baguettes and sourdough breads. It also works well for making laminated doughs and quick breads.

Product shelf life is dependent upon storage conditions and is highly variable. Product should be stored under cool, dry, dark conditions in a humidity controlled environment. Industry standard for product shelf life, when stored under optimal conditions, is 6 months to 1 year from date of manufacture.
