Dessicated coconut is simply very fine ground dried coconut meat commonly referred to as Copra. It is different from coconut flour in that most of the moisture is removed but retains all of the fat whereas coconut flour has the fat removed and retains more moisture. With a subtle sweetness and light coconut flavor, dessicated coconut chips are commonly used to make confections and desserts such as chocolates and macaroons. It is also delicious sprinkled over fresh fruit.
Nutritionally, coconut contains 18 grams of fat (16 grams of which are saturated fat) per 1 ounce serving. It also contains 7 grams of carbohydrates, 5 grams of fiber and 2 grams of protein. Coconut is a significant source of the micro-nutrients manganese, iron, phosphorous and zinc. Because of the higher fat content, coconut is popular in Paleo and Ketogenic diets.

Suggested Storage: The product shelf life is dependent on storage conditions and is highly variable. Coconut chips should be stored under cool, dry conditions and in a humidity controlled environment. The industry standard for shelf life, when stored under optimum conditions, is 12 months from the date of manufacture.
