With a distinctive, pungent fragrance and warm, slightly sweet flavor, nutmeg is most commonly used in baked goods, confections, meats, sausage, sauces, and seasonal beverages.
Nutmeg (Myristica fragrans) is the seed from the fruit of dark-leaved evergreen trees that grow predominately in Indonesia. The seed of the fruit is dried gradually in the sun for 6 to 8 weeks. While it is drying the nutmeg kernel shrinks away from the hard shell of the seed until the kernels rattle inside. Once they are completely dried, the shell is broken leaving the whole nutmeg kernel.
